Studies in this area aim to characterize the main foodborne pathogens associated to animal origin products, targeting the identification of their origins, distribution and persistence in the food chain, and the characterization of their pathogenicity features.

Lactic Acid Bacteria

Studies in this area aim to characterize the lactic microbiota naturally present in animal origin foods, searching the identification of isolates with bioconversative, technological and beneficial features.
